About the position
Bristol Bay Alaska Tourism, LLC, dba Bristol Adventures, is looking for a Chef/Lodge Keeper for our Grosvenor Lodge in Katmai National Park. The lodge, under a Concessions Contract with the National Park Service, Grosvenor is a small boutique fishing lodge which hosts a maximum of 6 guests at a time. The principal program at Grosvenor is sportfishing and the entire operation is run by three employees. We provide our guests with extraordinary experiences in a stunning Alaskan setting, surrounded by bears, eagles, and fish. As the Chef/Lodge Keeper, you will be part of a dedicated team. This is a temporary seasonal position. Food and housing will be provided at no cost. Pay is approximately $5,500 per month and is issued every two weeks, standard overtime applies, and tips are pooled among all staff.
Responsibilities
- Responsible for the execution of the menu in a timely and efficient manner based on in house guest numbers and needs.
- Cooking breakfast, lunch, and dinner 7 days per week.
- Primary face and customer service point for the guests during each meal service.
- Oversee all kitchen operations, including ordering, inventory, quality control, special diet requests, and adherence to U.S. Public Health Service Standards.
- Daily cleaning of guests' cabins, dishes, and lodge laundry while anglers are out fishing for the day.
- Wait tables during meal hours and bus tables.
Requirements
- Experience in a restaurant operation that includes breakfast, lunch, and dinner.
- Prior cooking experience and knowledge of a wide array of kitchen equipment and tools.
- Physically able to lift 50 lbs.
- Must be able to handle working in a remote setting.
- Excellent customer service skills.
- Prior professional culinary experience required a minimum of 2 years.
Nice-to-haves
- Current ServSafe manager certification.
- Alcohol Professionals Training (TAP) Card.
- CPR/First Aid with AED card.
